Vegetable Medley Casserole
VEGETABLE MEDLEY CASSEROLE
1 (11-oz.) can white corn, drained
1 (16-oz.) can French-style green beans, drained
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/2 cup chopped onion
1/2 cup (2 oz.) grated Cheddar cheese
1/2 cup sour cream
1 (10-3/4 oz.) can cream of celery soup, undiluted
Salt and black pepper to taste
1/2 cup margarine,melted
1-1/2 cups crushed round buttery crackers
- Combine corn, beans, celery, bell pepper, onion, cheese, sour cream and soup. Season with salt and black pepper. Pour mixture into 13x9x2-inch baking dish or 2-quart casserole.
- Combine melted margarine and cracker crumbs. Sprinkle on vegetable mixture.
- Bake, uncovered, at 350 degrees for 45 minutes.
Makes approximately 6 cups
